Traditional Welsh Rarebit

INGREDIENTS

  • 8oz grated
  • strong cheddar
  • 1 tablespoon Welsh butter (salted butter)
  • 2 teaspoons Worcestershire sauce
  • 1 level teaspoon dry mustard
  • 2 teaspoons flour
  • 4 tablespoons Welsh beer (bitter/ale not lager)or milk
  • dash of white pepper
  • 4 slices bread toasted on 1 side only

INSTRUCTIONS

  1. Put the Worcestershire sauce, butter, mustard, pepper, cheese and flour into a saucepan
  2. Mix well
  3. Add the beer or milk to moisten(careful not to make it too wet)
  4. Stir the mixture over a low heat until it’s melted
  5. Remove from heat once the mixture has achieved the consistency of a thick paste
  6. Allow to cool slightly
  7. Take four slice of breads while cheese mixture is cooling
  8. Toasts breads on one side only
  9. Divide mixture onto the four slices
  10. Slide back under the grill to brown
  11. Serve while hot

 

French Toasts Roll-Ups

INGREDIENTS

  • 6 slices white or wheat breads
  • Nutella, Strawberry Cream Cheese or any preserves
  • 2 Tbsp. unsalted butter
  • 1 egg
  • 1/2 cup milk
  • 1/2 cup granulated sugar
  • 1/2 tsp. cinnamon

INSTRUCTIONS

  1. Trim the crust from the breads
  2. Flatten the slices slightly with a rolling pin
  3. In the breads slice, add about 1 teaspooon of the filling of your choice
  4. Roll the breads like a cigar
  5. In a bowl mix the egg and the milk; whisk until well-combined
  6. On a small plate mix the sugar and cinnamon
  7. Set a skillet over medium heat
  8. Add unsalted butter
  9. Soak the rolls in the milk mixture until fully coated
  10. Add them to the hot pan and cook the rolls until they are golden brown on all sides
  11. Roll in sugar/cinnamon mixture 

 

Bacon, egg and toasted cups

INGREDIENTS

  • 6 slices of bacon
  • 6 slices of muffin
  • Shredded cheese
  • 6 eggs
  • Salt and pepper

INSTRUCTIONS

  1. Preheat the oven to 400° F
  2. Grease 6 wells of a muffin pan with butter
  3. Partially cook bacon about 3-5 minutes in frying pan(don’t make it crispy)
  4. Transfer to a paper towel-lined plate
  5. Cut out rounds of breads
  6. Press the muffin rounds into the greased muffin wells
  7. Curl pieces of bacon around the periphery in each pieces of muffin
  8. Sprinkle a small amount of shredded cheese in the center of each piece of muffins
  9. Crack egg and remove half the white
  10. Drop the remaining white and yolk over each piece of the muffin
  11. Bake until eggs are cooked through to your liking (about 6-10 minutes) and bacon is crispy
  12. Run a knife around the edge of each muffin well and pop the egg cups out
  13. Season with salt and pepper to taste
